Zucchini Egg Cups

  • Olive Oil or Cooking spray
  • zucchini, peeled into strips
  • 4 rashers bacon, chopped
  • 1/2 cup capsicum, diced
  • eggs
  • 1/2 cup cream
  • 2 teaspoons Chives & Onion Mix
  • 1 cup grated cheese
  1. Preheat oven to 200 celcius and grease a muffin tin with either olive oil or cooking spray.
  2. Line the sides and bottom of each muffin casing with zucchini strips, to form a crust. Sprinkle bacon and capsicum inside each case, then a pinch of seasoning over the tops
  3. In a medium bowl whisk together eggs, heavy, cream.
  4. Pour egg mixture over bacon and capsicum then top with cheese.  
  5. Bake until eggs are set, approx 30 minutes
