  Ingredients Olive Oil or Cooking spray 2 zucchini, peeled into strips 4 rashers bacon, chopped 1/2 cup capsicum, diced 8 eggs 1/2 cup cream 2 teaspoons Chives & Onion Mix 1 cup grated cheese Method Preheat oven to 200 celcius and grease a muffin tin with either olive oil or cooking spray. Every year whether it's Father's Day or his birthday Stephen only ever wants desserts.
This isn't entirely a Lemon Meringue Pie - the crust is made out of Nabisco Premium Crackers and the filling is Sweetened Condensed Milk with Lemon/Lime juice in it. The topping actually called for cream but in true Stephen fashion he requested Meringue which I stuffed up. Overall he liked it and polished off his piece in no time at all.
